During our visit to San Antonio, we've enjoyed several great forms of sandwiches. The first was a tasty fish taco that hits the spot in the summertime.
Summer Fish Tacos
- Take a mild fish like Tilapia and grill it, seasoned with a light brushing of olive oil and some ground cumin
- Double-up some corn tortillas after heating them up briefly in the microwave or skillet (in the microwave, just cover them with a wet paper towel and heat for 20 seconds)
- Add some mango pico de gallo...chop up fresh tomatoes, onion, cilantro, and mango (or pick up some pre-made pico de gallo from a great grocery store like H-E-B)
- Enjoy!
