Hatch Green Chiles

The end of August and the beginning of September signals an important end to a long season... For the moment, I'm referring to the heralded green chile peppers of Hatch, New Mexico, which are much sought after for their unique flavor and their potent heat. I visited New Mexico once during a band trip in college and was quickly charmed by the incredible taste of the New Mexico green chiles which kept me coming back for more. The green chiles of Hatch, New Mexico are reported to be the best green chiles in the world, and for the past several years, I had the privilege of getting to stock up on fresh Hatch green chiles at the Central Market in San Antonio during their annual "Hatch Chile Festival." The Hatch green chiles are only available this time of year, and if you haven't tried them before, I'd encourage you to take a taste of what you're missing.
