Apple Cheddar Quesadillas
Per quesadilla:
- Take a flour tortilla and spread a light amount of butter on one side...flip it over
- Spread a layer of apple butter on the other side of the tortilla
- On top of the apple butter, sprinkle diced carrots and onions to cover
- Season to preference with salt, pepper, and a little cumin (optional)
- Sprinkle a generous amount of shredded cheddar cheese on top of the apple butter, carrots, and onions
- Fold the tortilla in half with the buttered side now on the outside
- Heat the quesadilla in a pan or skillet over medium to med-high heat
- Flip over to the other side once it has browned (usually a minute or two for each side)
- Once both sides have browned and the inside is gooey, serve it up! I recommend pairing it with some apple cider and garnish with sour cream.
