Apple Cheddar Quesadillas: Fall Foods Pt. I

In honor of the fall season, here's one of my favorite fall recipes that we enjoy this time of year:

Apple Cheddar Quesadillas
Per quesadilla:
  • Take a flour tortilla and spread a light amount of butter on one side...flip it over
  • Spread a layer of apple butter on the other side of the tortilla
  • On top of the apple butter, sprinkle diced carrots and onions to cover
  • Season to preference with salt, pepper, and a little cumin (optional)
  • Sprinkle a generous amount of shredded cheddar cheese on top of the apple butter, carrots, and onions
  • Fold the tortilla in half with the buttered side now on the outside
  • Heat the quesadilla in a pan or skillet over medium to med-high heat
  • Flip over to the other side once it has browned (usually a minute or two for each side)
  • Once both sides have browned and the inside is gooey, serve it up! I recommend pairing it with some apple cider and garnish with sour cream.
