After a weekend at the beach, I am thankful for great beach food, including crabcake sandwiches, fried clams, fish & chips, funnelcake, fresh-cut fries, salt water taffy, and fresh lemonade. While I don't have a recipe for a great crabcake sandwich, I can offer a recipe for another sort of sandwich we enjoyed at the beach.
Beach Quesadillas
- Butter one side of a tortilla and place in a skillet on medium-high heat (buttered side down)
- On top of the tortilla, layer monterey jack cheese, sauteed sweet peppers, and sauteed onions
- This time around, we also included sliced sausage (pre-cooked) to cater to all present diets, but to really get the beach experience, you could include lump crab meat
- Top again with cheese, then top with another tortilla (this time buttered side up)
- Press the quesadilla together to flatten it as much as possible
- After about 1-2 minutes, flip over onto the other side and cook another 1-2 minutes until it's browned
- Enjoy!
