Pumpkin Turkey Paninis: Fall Foods Pt. II

Continuing the parade of fall season recipes, here's another one of my favorites that we enjoy this time of year:

Pumpkin Turkey Paninis
Per panini:
  • Take a slice of a good, flavorful, crusty bread (sourdough works well, or most artisan breads if you've got any handy)
  • Spread a layer of pumpkin butter on top of the slice of bread
  • Place slices of turkey breast (I like honey-maple glazed or peppered turkey) on top of the pumpkin-buttered bread (as many as you prefer)
  • Place slivers of sweet onion on top of the turkey (as many as you prefer)
  • Sprinkle salt and pepper on top
  • Place a layer of colby jack cheese on top of that
  • Top with another slice of bread
  • Lightly butter both of the outside ends of the sandwich and then toast either in a pan (grilled cheese-style), panini press, or George Forman electric cooker
  • Grill until they're toasty and tasty...enjoy!
