Pumpkin Turkey Paninis
Per panini:
- Take a slice of a good, flavorful, crusty bread (sourdough works well, or most artisan breads if you've got any handy)
- Spread a layer of pumpkin butter on top of the slice of bread
- Place slices of turkey breast (I like honey-maple glazed or peppered turkey) on top of the pumpkin-buttered bread (as many as you prefer)
- Place slivers of sweet onion on top of the turkey (as many as you prefer)
- Sprinkle salt and pepper on top
- Place a layer of colby jack cheese on top of that
- Top with another slice of bread
- Lightly butter both of the outside ends of the sandwich and then toast either in a pan (grilled cheese-style), panini press, or George Forman electric cooker
- Grill until they're toasty and tasty...enjoy!
