A great summer sandwich that we've recently enjoyed combines several fresh ingredients that are fresh from the garden in the summertime. It's our version of a grown-up's grilled cheese sandwich.
Grown-Up's Grilled Cheese
- Take two slices of hearty bread (for example, sourdough or focaccia)
- Fill them with fresh tomatoes
- Fill also with strips of fresh basil
- Layer the inside with your favorite cheese (I like Colby Jack)
- Butter the outsides of the sandwich
- Heat in a skillet or grill or panini press until golden brown
- Season according to preferences, and enjoy!
