A wonderful weekend visit to Pennsylvania included a fun-filled hobo's afternoon with some of my adventurous cousins, including a canoe ride down the Allegheny river and a campfire meal in the rain. I was thrilled to feast on my first "hobo pie," which was as good as advertised, and a campfire treat that I look forward to enjoying at future campfires in future summers. Here's a quick recipe for a couple pies we enjoyed.
Hobo Pie
- Take two slices of sandwich bread and butter one side of each
- Place the buttered sides face down in a hobo pie iron
- On top of one of the slices, place desired toppings for the pie
- Press the hobo pie iron sides together, closing and latching it for safety
- Place directly in hot coals for about 6 minutes, turning after 3 (and check to see how it's cooking as you go)
- Carefully remove the pie from the iron (careful...it's hot!)
- Enjoy!
Pizza Hobo Pie
Toppings include:
- Pizza sauce
- Sliced onion
- Pepperoni
- Shredded mozzarella
- Sliced bell peppers
- Sliced banana peppers
- Pizza seasoning
- Crushed red pepper
Cheddar Jalapeno Hobo Pie
Toppings include:
- Shredded Cheddar cheese
- Sliced jalapenos
- Sliced onion
- Sliced tomato
- Chili powder
