Bread. Butter. Cheese.

  
A recent podcast I listened to told the story of an underground purveyor of grilled cheese sandwiches in New York City who takes orders from text messages on his cell phone and then delivers fresh grilled cheese sandwiches to customers on a bicycle.

The "underground" operation is called, "Bread.  Butter.  Cheese.," and the owner is currently operating with a cell phone and bicycle because he is using an illegal kitchen from an undisclosed location to make his sandwiches.  His business started when he began making grilled cheese sandwiches for friends, who soon spread the word and passed around his cell phone number.  Now that his underground business is picking up, the owner plans to soon have enough money to rent a commercial kitchen space so that he can take his business "above ground" and no longer have to work in the shadows.

Despite his humble operations, it sounds as though he takes great pride in his grilled cheese sandwiches and is pretty creative with his offerings.  Examples go beyond the typical "bread, butter, cheese" recipe...cheeses range from pepper jack to wensleydale to brie to cheddar, with a variety of possible toppings include macaroni and cheese, tomatoes, bacon, apples, and jalapenos to name a few.

I found the story to be interesting, and while I don't think I'd ever want to start taking text messages and hopping on a bike to deliver grilled cheese sandwiches illegally, it did start to get me thinking about how I can be creative with my grilled cheese sandwiches at home.
